a2eb4e6882 Fix iOS audio and transcript streaming 
- Add AVAudioSession configuration via @livekit/react-native
- Configure playAndRecord, defaultToSpeaker, voiceChat for iOS
- Fix transcript spam: update existing message until isFinal
- Remove unused Sherpa TTS service
- Add simulator build profile to eas.json
